The Cook 2- Garde Manger is responsible for preparing all food items, based on standardized recipes, for the Restaurants, Room Service, and Banquets, while maintaining the highest standards to produce an appealing and appetizing product. He/she is also responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio. He/ she responsible for the day-to-day execution, preparation, plating and presentation of menu items, as well as station sanitation, organization and adherence to local and federal health code laws and/or policies set in place by Viceroy.
In this position, you will be preparing (but not limited to): Salads and other appetizers, cold and hot soups, deep fried items, pastries and other desserts. You will be handling seafood and shellfish, tree nuts, eggs, dairy and gluten allergens, for both a la carte service and some banquet service.
